The ingredients needed to make Chicken Dum biryani:
- Get 1/2 kg of Rice.
- Take 8 of Chicken leg pieces.
- Prepare 3 of Onion.
- Get 6 of Tomato.
- Make ready 1 tsp of Garlic ginger paste.
- Prepare 1/2 tsp of each ginger garlic paste for marination chicken drumsticks (legs).
- Make ready 2 of Onion big (slices)for fry golden for topping.
- Make ready 100 gm of cashew fried for topping.
- Make ready 1/2 cup of Coarinder leaves and pudina leaves each for nice flavour.
- Make ready of Salt to taste.
- Prepare 1 tsp of Red chilli powder Kashmiri.
- Get 1/2 tsp of Eastern Biryani masala.
- Prepare 100 ml of Oil.
- Prepare 1 tbs of Ghee.
- Get of Saffron few mix with warm water.
Steps to make Chicken Dum biryani:
- Wash chicken and squeeze excess water and make cut lines with knife on leg pieces.
- Take a bowl add chicken legs salt,red chilli powder, curd 1/4 cup ginger garlic paste and marinate for 1/2an hour.
- On the other side wash rice and soaked for 5-10 mins.
- Take big pan and Enough water to boil add little oil and add green cardamom, cloves, cinnamon, black peppercorns, put rice and boiled not fully done.
- Drain water fully with the strainer.
- Now take big pan add refined oil or ghee sauté chopped onion then chopped tomato cook till very soft add all dry masala and Eastern biryani masala.
- Grilled chicken I had used gas oven tandoor wonder chef u can use greased grill pan till not fully tender.
- Put in the onion tomato ready masala which we have ready and cook with masala for 5 mins.
- Mix little coriander and pudina chopped switch of the gas.
- Grease big pan with ghee heat and layer the rice.
- Spread chicken ready on it and again layered the rice sprinkle fried onion, fried cashew, saffron milk,ghee2tsp,chopped pudina Ann’s coriander and raisins if u like.
- Cover with lid and seal with thin chapatti dough all around.
- Switch on the gas and cook on slow heat about 15-20 mins.
- Ur biryani is ready.
- Serve hot biryani with papad, coconut chutney, mango or dates pickle, raiata of onion tomato green chilli.
